It is white in colour and is in hygroscopic crystalline compound form with a minimum 98% purity, it gives slightly Vinegar type odor. It is derived from the reaction of acetic acid and ammonia. Its pH level is 6.5-7.5. Ammonium acetate is a chemical compound with the molecular formula C₂H₇NO₂.
Ammonium acetate is produced by saturating glacial acetic acid with ammonia or by the neutralization of acetic acid with ammonium carbonate. Ammonium acetate is the salt of the weak acid and a weak base therefore it is often used with acetic acid to create a buffer solution. It is also used as a diuretic drug. It is used as a biodegradable de-icing agent. It is also used as a food additive as an acidity regulator. Ammonium acetate is used as a protein precipitating reagent in dialysis to remove contaminants via diffusion. It is also used as a reagent in agricultural chemistry for the determination of soil cation exchange capacity. Besides use in chemical and molecular biology research, it is also being used in textile and preservation of food products such as meats.
